Originating from Japan, this exotic-seeming knife shape established itself in kitchens around the world a long while ago, and has also formed part of our collection for a long time. The WMF santoku knife from the Spitzenklasse Plus collection is equal to its Japanese role model in every way: It is distinguished by its extreme sharpness and its typical shape, whereby the blade is wider than the handle. This leaves more place for your fingers when chopping, and preparing wafer-thin sushi or delicious wok-based recipes is just as easy as using the knife to roughly chop meat, fish, vegetables or herbs. Thanks to the light weight in relation to its size, the ergonomically-shaped handle and the ideally balanced weight, it sits perfectly in the hand.

Heating the blades in a special furnace enhances and hardens the blade steel, allowing it to be sharpened to a sharper angle than previously possible. During the final grinding process, the knives are given the Performance Cut.
