The knife is the most important tool in the kitchen. The WMF product range covers up to 30 different types of knives and 10 different series for various types of food. How wide a choice you should have in your own knife block, is of course a matter of taste. A big kitchen knife, though, is something that no kitchen should be without.
Knives for a well-sorted kitchen.
There is a perfect blade for every purpose. Which choice of knives you really need, depends on your preferences and the frequency of use. Yet, a sharpening steel and suitable chopping boards are essential to any kitchen.

The vegetable knife is small, sturdy and easy to hold. Its short, handy blade is ideal to peel and cut fruit, vegetables and mushrooms. The chef’s knife will skilfully chop meat, fish and vegetables. You can also use the wide, strong blade to chop herbs or nuts. The broad side of blade flattens everything – even schnitzel, which is already thin when it goes into the frying pan. To protect the blade, always use the knife’s back when removing food from the chopping board. The bread knife rips through the hard crust with its long powerful blade and cuts fresh bread into smooth slices. The beautiful double serrated edge is exclusive to WMF knives. It makes sure that you can cut even soft fruits with the bread knife without crushing them.
For amateur cooks.
Utility and larding knives have short blades which allow to peel, cut and prepare salad, fruit and vegetables. The long point of the larding knife makes deep cuts into any kind of meat. Carving and filleting knives harness extremely sharp flexible blades to remove the skin and bones from fish fillets, and portion large pieces of meat and Sunday roasts. The boner is a real specialist when it comes to cutting up meat and fish. Its slim blade is flexible enough to smoothly glide along bones and tendons. The paring knife has a beak-shaped blade which adapts to every curve and removes a thin layer of peel from the fruit.

The Santoku knife cuts and chops meat, fish, vegetables and herbs. This unbelievably sharp Japanese knife is much wider and not very arched, compared with the chef’s knife. For cutting, the whole blade is used with slight pressure. The chinese chef’s knife is impressively large, and it is used for everything in China: cutting, chopping and dicing, for meat, vegetables and herbs. The extremely wide blade is ideal for throwing the chopped food into pot or pan. A magnificent addition to any kitchen!
A brief guide to cutting.
Chopping, slicing, cutting: Every blade is designed for a special purpose, and only the right technique will exploit its advantages to the full.
„You should enjoy holding the knife in your hand time and again.“
Markus Jüngert, Head of Gastronomy at the WMF Group
The most important thing about a knife is that it cuts well. Likewise, you should feel comfortable using it. A perfect balance between the blade and the handle as well as an ergonomic design will make sure that the knife does not slip, even when you are working with ingredients that are difficult to cut, or when quickly cutting to precision. Moreover, the transition from the blade to the handle must be seamlessly processed to ensure that no acids or other substances can find their way inside the knife and damage it.

How to maintain your knives properly.
Gentle cleaning by hand, not in the dishwasher, separate storing instead of medley in the cutlery drawer and sharpening on a regular basis will preserve your knives’ quality for a very long time.
